A busy mom’s meal plan for a week with little time for prep.

It’s been a crazy busy week of work travel and now I am in the middle of my last yoga teacher training weekend. I seriously can’t believe that my training program is pretty much over! I wanted to get this post out yesterday but flying back from NYC, working and then prepping for my yoga weekend left me little to no time.

Although, as promised last Friday, I am going to start sharing my weekly meal plans with all of you. For next week, I have limited time to do any cooking prep so crock pot and simple meals are my plan. I also am focusing on healthy recipes as I need to balance a lot of the eating out I did this week on a work trip.

For two days, I was in NYC this week for work visiting my team which meant lots of eating out and drinks. This also resulted in a lot of fun as well so no complaints or regrets either!  I just have the realization that I need to balance the greasy Chinese food consumed at midnight after a night of drinking a few too many drinks with some veggies.

It’s all about balance.

With that said I am hoping to get back on track next week. Hopefully some of these recipes and ideas will inspire you as well when you run into similar weeks because let’s be honest, we are all busy and we all need to have balance to maintain a healthy lifestyle.

When I run into weeks like this, I like to utilize my crock pot as much as possible and also cook simple meals. A simple meal to me is usually picking a meat of some sort and grilling or baking it and then having simple veggie sides. Some of my favorite veggie sides are steamed green beans (from a bag), salad (aka lettuce + whatever other raw veggies we have) and rice (from a bag). These days there are a lot of options for simple sides thankfully!

Here is what I am cooking for meals over the next week:

Sunday:

  • Lunch: Tuna over lettuce with tomatoes and avocado
  • Dinner: Veggie Egg Scramble with Sweet Potatoes (basically saute vegetables and scrambled eggs)

Monday:

Tuesday:

Wednesday:

  • Lunch: Chicken and Black Bean Salad
  • Dinner: leftover shrimp asparagus stir fry

Thursday:

  • Lunch: leftovers or go out
  • Dinner: Grilled Pork Chops + Roasted Sweet Potatoes + Green Beans

Friday:

  • Lunch: left overs or go out
  • Dinner: leftover pork chops + sweet potatoes + green beans

As usual, lots of leftovers and simple meals. Next week we are going to have to cook more than I usually want to during the week but since my yoga weekends leave little time for food prep.
